HISTORICAL NOTES
Dracontion, in Greek “serpent,” is the emblem of the city of Itri and the Monti Cecubi. According to legend, it is the mythological figure of the hydra, the seven-headed serpent defeated by Hercules in one of his twelve labors.

GRAPE VARIETY AND PRODUCTION AREA
50% Fiano, 50% Falanghina. Selection of the best bunches harvested at medium ripeness from the vineyards of Itri, at an altitude of about 300 meters above sea level, on clayey-calcareous soil with a strong structure where the sea breeze from the sea of Sperlonga and Gaeta favors its growth.

VINEYARD CULTIVATION AND WINEMAKING
Guyot training system; planting density is 4000 vines/ha with a yield of 70 q/ha. The drying process occurs on racks in a controlled ventilation and temperature cell for about 2 months. Alcoholic fermentation takes place in stainless steel tanks at a controlled temperature.
Aging in acacia barriques for 2 years precedes bottling.

HARVEST TIME early September.

ORGANOLEPTIC CHARACTERISTICS
Intense golden yellow color with amber reflections. Delicate aroma with hints of dried apricot, honey, dates, and balsamic notes. The pleasant sweetness is balanced by a pronounced acidity. Broad and persistent flavor.

GASTRONOMIC PAIRINGS
Desserts and dried fruits, aged and blue cheeses.
